I've been on a diet lately... OK, I've been "supporting" Mrs. ThunderLund on a diet.  She's been finding the recipes and I've been helping her make them and offering my 2nd opinion on how they taste and if we should add them to the normal rotation.  We found a few good ones, this one so far is my favorite...  So easy, so good for you, and SO DELICIOUS! I'm a meat and potatoes guy - takes a lot for me to think of a salad as anything other than a nice side dish.  But I've been taking these to work for lunch lately.

Greek Mason Jar Salad
Serves: 4

Ingredients:
5 quart size wide mouth mason jars
10 tablespoons Greek vinaigrette (see below)
2 yellow peppers sliced (or use different colors)
2 cucumbers peeled and sliced
1 onion, sliced into rounds
1 quart cherry tomatoes
4 ounces feta cheese
5 cups chopped romaine lettuce

Easy Greek Vinaigrette
(will make enough for 4 mason jars)
3 tablespoons red wine vinegar
2 tablespoons lemon juice
5 tablespoons extra virgin olive oil
3 garlic cloves, minced
Good pinch of sea salt
freshly ground pepper, to taste
½ teaspoon dried basil
½ teaspoon dried oregano

Mix all dressing ingredients together in a small bowl and set-aside

Instructions:
Divide all ingredients into 4ths. Layer each mason jar with the ingredients beginning with dressing then adding peppers, cucumber, onions, tomatoes, Greek cheese, finishing with lettuce leaves. Keep them cool in your fridge. Just grab it    when you need it.
Give the salad a shake and arrange it on a plate.

Note: Pack the layers tightly without much air in between. That way your salad remains longer fresh.

a buddy of mine eats those Mason Jar salads as part of his diet too.  I started eating right and drinking around 80 oz of water a day and lost 8-10 pounds in the first ten days.  It wasn't too taxing and I was only 188 to start but kind of short for that weight.  A lot of frozen veggies replaced the normal starchy stuff at supper especially.  Diet coke is a treat now instead of 5 a day.  Frankly I think a main key was the water for me because I drank none before and losing that amount of weight merely from calorie intake is basically impossible except the water raises your metabolism if I'm correct.  Who knows, I don't understand how an outboard motor works but I use one all the time!

Those salads look appealing to the eye too which has to help the diet.

The water washes the sodium out of your body and acts like a diuretic to cause you to lose weight due to less retained fluid is my guess.

We got the stuff to make these today....question?....did you slice the tomatoes? or leave them whole?

Yah with all the empty canning jars waitin for fall,A ready nohassle salad sounds handy!!

If packed tight, there's very little air for spoilage.  they'll keep for 3-5 days, easy. Just grab one when you're hungry!  Looking good HD!
