no boar not getting canned or pickled................ no acohol involved.................tonight starts my canning adventure for the year. starting out with 1/2 bushel of pickles. garlic dill and some hot pickles, only difference between the 2 are the hot ones get 4-6 thia chili peppers in them!!!!!!!

So Glenn is that a real hot pickle then?  I would like to make some hot ones this year but not smoking hot.  I help my wife make pickles and we really enjoy it.  She makes a real good dill pickle and I would like to make some of them hot.  Is it easy to find Thai chiles?

They can get hot but not smoking hot. As far as finding them not sure. I got them from a former friend. She got them at the Minneapolis farmers market  I use them also with green beans. Had green beans with jalepeno too and they where good. Alot depends on how long you let them set!

I do a lot of pickles...if you want them warm, use a jalapeƱo
lite hot, use a seronto
little hotter, use a habinaro
hotter with a kick, use a ghost pepper

This year I'm growing some scorpion peppers....they should burn going in....and coming out...

made up 3 gallon jars of cukes.......milies pickles. there are 2 heads of cabbage going to be turned into sauerkraut this afternoon!!!!!

pretty easy to make and tastes just like the green can of FRANKS kraut.

I use a food processor to shred the cabbage. pack and stuff into a qt jar. add a teaspoon of table salt and pour hot/boiling water till jar is full. clean jar rim, cap and seal tight. in a week or 2 loosen lid to let gas escape. after a few days tighten tight again. will eventually seal!!!!!!!

yesterday did up 12 pints of salsa and 2-2 gal jars of frig or as I call them millies pickles.

To many zucchini so I made some hot dill kosher zucchini pickles. Grandkids love them.  Also made 6 pits of Mrs. Wages chili sauce.
Conservative on some things.....Liberal on others.....Sane most of the time.

I have always wanted to make sauerkraut.  The wife says it really was smelly when her family did it when she was a kid.  lol  So Glenn that sounds like a good method.  So when it seals after the letting it gas out can you just leave it on the shelf without refrigeration?  And how long should you wait before eating it?

Yea if/when it seals it can sit in the shelf. I,d wait a couple months. With this method you need to let it cook/ simmer an hour or so
