I'm always seeing pork loins on sale (Aldis, 1.69lb this week) and I like the smoked Canadian bacon talk....figured this was on sale, and I like to smoke fish, it would be worth the money.

ooooooh C bacon, once you go reiny cbacon ya never buy store bought again. Ive got two loins in the brine as we speak. I actually added some left over maple flavoring to one batch, dont no if its enough to taste the difference but we'll see.

OK. bought one of those tube things and some hickory pellets  today at fleet farm   

I'm thinking smomed eggs but the book says apple.   I have a bunch of apple wood so am not big on paying for apple pellets.  How are eggs with hickory?   Thanksgiving is coming up.

I use Hickory for everything.  Luv it.  Fruit woods are mellower...

I'm with LPS on this. Hickory on meat, fruit woods, chokecherry, apple, etc. for fish. Just inheirited my father-in-laws elect. smoker. Been playing around with it with some success.

i would think ud want a fruit pellet  with eggs. eggs dont take alot of smoke somwhat ever u use it dont take long.

So, to make smomed eggs for deviled eggs.   Cold smoke, how long?    I was thinking throw the tube thingy in the bottom of my weber kettle, put eggs on the top grate.   so maybe an hour or so?   

I'll see how they do with hickory.  If it doesn't taste good, I'll get some apple although it is hard to pay for apple since I have like 20 apple trees that make plenty wood, just not pellets.

Del, I do mine in Apple for 2 hrs of cold smoke, any kind of heat you better back off the time..

I was thinking no or little heat.  I don't want the eggs to get rubbery from overcooking. 

So, two hours it is.  Maybe I should smoke some cheese while I am at it.
