About to do this for the first time.  My Sister-in-law's family raises them and are taking some into butcher.  I'm obviously going to order chops, tenderloins, roasts, but I'd like the belly intact and not processed (aside from maybe having it cut into manageable sections) to make my own bacon.  Is belly and side pork the same thing or are they different parts of the pig.  I'd like to make all of that into bacon just want to know what to ask for.

Any advice would be appreciated.  Thanks!

Bacon comes off the sides, it's the fat layers with meat that makes the bacon.

I have them cut the pork belly into 3 lb chunks so I can make bacon.  That usually gives me 4 of them I think.  This year I only got a half hog so got 2 of them.    I am fairly good at math....    :scratch:  I also got more ground pork and only saved a couple of roasts.  I can use the ground in sausages or even just for burgers.

That side pork is fresh meat UN cured UN smoked,cure it and it is panchetta,cure it and smoke it an its bacon.Or salt it and you have salt pork.All off the same pork belly

When my neighbor brought our hogs to the butcher last year the butcher said someone called about how to get their hog processed.  It was their first time getting a hog butchered.  The lady told the butcher, "we want all pork chops".  The butcher then said how big do you want the roasts.  The lady again said "well no we want all pork chops".   :rotflmao:  The butcher actually had to explain to her that the whole hog can't be made into pork chops...   There are other parts that are not pork chops.   The lady was real disappointed about that.  She thought they were going to get 150 lbs of pork chops and that is all she wanted...    :rotflmao: :rotflmao:

i paid  150 just for the half hog, but i have prossessing to do yet
, which is est. about 100 bucks depending what one has done

I looked at the commodities prices for "lean hogs"  which is basically a base price for a hog carcass.  It is running in the low to mid 40s in price per pound.   There are additions and subtractions based on the quality of the carcass.  And that is the price in large quantities so one carcass will be more expensive.   

I am surmising it also includes skin and feet etc, but I am having a hard time verifying that.

Ya I can't believe that people are getting $50 for young like 20-30 lb feeder hogs.  Those are babies.  And they are telling people that they are 50 lbers.   Noone actually weighs them.  They just buy them and feed them till Sept and get them butchered.  In southern MN they are cheaper and more accurate I am thinking..
