I just picked up the last batch of sausage & beer sticks.
I'm gonna freeze most of it.
Is vacuum packing in plastic good enough?
Should I wrap it in butcher paper then vacuum pack that?
Or, is butcher paper good enough?

If you can I would vacuum pack it.  Butcher paper will work but not for an extended time.

Depending on how long it sits in the freezer, I see nothing wrong with freezer paper. But that's only cause I'm not totally convinced vacuum pack is all that impressive.

I'd go with vacuum pack, if you can. Air is what causes freezer burn, and with the air all out, lot less chance of it when in the freezer. I like giving a good wrap of butcher paper over 2-3 pkgs it if it's gonna be in the freezer awhile. It's cheap and easy to do, so why not?

I use cling wrap on my fish that I freeze. Much cheaper & very easy to wrap tight to get the air out. If I think they might be in the freezer for a while I'll double wrap them, then into a ziplock bag that I try to get most of the air out of too. Found some that were almost a year old & hadn't got freezer burnt.

We got a good vac pack machine a year or two ago.  I love it and it us actually fun to use.  I buy a ribeye loin and have it cut into steaks then bring the bag of them home and vac them.  Does an awesome job.  And fish in nice flat pkgs. is awesome too.  Makes nice fish gift pkgs.

I do the same thing with cling wrap, no complaints other than it can get kinda bulky on certain meats .  If freezer space is an issue vac sealed might be the way.

My vote is for vacume bags.  Like Reb said, air is the problem with freezer burn.  Vacume bags are the tool for that.  It is all I use for sausage and meats.  Now real freezer paper with that one side that is shinny works great too but not as long as a vacume bag.  I've used freezer paper for many years and haven't had problems because I eat the stuff I wrap within a year.  But after I used vacume bags that is all I use now.  I still eat or give away everything within a  year.  good luck.

She was thinking, that thr light would make the sausage look gray if not eaten right away. Kind of like when you buy porkchops that have been sitting in the case to long.

I hear ya HD. DONT get me wrong I use the vacuum thing to. Just not convinced there the all go to solution. I use both depending on what I be wrapping. Anything with bone I use paper!

It's been an insane ride this year Glenn!  We shot the crap out of the geese, did awesome on fish, and now deer!  Maybe have to go shoot some cat food? ( Ditch chickens)

Glenn that is because even dogs can only handle eating 1 or 2.  After that my dog is begging for his dry dog food.  He sees me going to the freezer to pull out some more sky carp and he growls at me.  Yes I know what you're  thinking and the answer is yes.  My dog is smarter than some humans.
