When we have Christmas dinner at the Niece & Nephew's, we don't have a traditional gift exchange.
Usually, we get a few "elephant" gifts wrapped up and placed in a pile. We sit in a circle around them, pass around 2 pie tins with dice (one counter clockwise, and the other clockwise) whoever rolls a double, gets to choose a "gift" till they are gone. THEN...we put a timer on for 2 minutes, start rolling and passing the pie tins again...but this time you get to steal or trade the "gift" you got till the time runs out.

Anyway (yeah, I know, that was long winded) I got something that I WILL use! It's FULL of recipes that sound really good!

Yup, the wife got it from my daughter for a gift. Supposed to take the toxins out of the air....or some flipp'in thing... course the new son-in-law, had a little to much "cheer" and licked it to see if it was really salt.....  :crazy:

I know there's some good beef stew recipes out there that use a bottle of dark Guinness in them....

Guinness Beef Stew
Why This Recipe Works

Dark Irish beer seemed like the perfect match for hearty beef stew—if we could lose the bitterness and keep the deep, roasty flavor. We added dark brown sugar, which balanced some of the bitterness with sweetness and bolstered flavor with its molasses-y notes. Cooked beer can be especially bitter; introducing some of the beer before cooking created a restrained bitter background, and adding the rest just before serving gave us robust stout flavor. We managed to bypass the step of searing the meat by cooking the stew uncovered in the oven. This not only helped brown the exposed meat but also let the sauce evaporate, concentrating its flavor.

Ingredients
1    (3 1/2-to 4-pound) boneless beef chuck-eye roast, pulled apart at seams, trimmed, and cut into 1 1/2-inch pieces
   Salt and pepper
3    tablespoons vegetable oil
2    onions, chopped fine
1    tablespoon tomato paste
2    garlic cloves, minced
¼    cup all-purpose flour
3    cups low-sodium chicken broth
1 ¼    cups Guinness Draught
1 ½    tablespoons packed dark brown sugar
1    teaspoon minced fresh thyme
1 ½    pounds Yukon Gold potatoes, unpeeled, cut into 1-inch pieces
1    pound carrots, peeled and cut into 1-inch pieces
2    tablespoons minced fresh parsley
Instructions
Serves 6 to 8

Use Guinness Draught, not Guinness Extra Stout, which is too bitter.

1. Adjust oven rack to lower-middle position and heat oven to 325 degrees. Season beef with salt and pepper. Heat oil in Dutch oven over medium-high heat until shimmering. Add onions and ¼ teaspoon salt and cook, stirring occasionally, until well browned, 8 to 10 minutes.

2. Add tomato paste and garlic and cook until rust-colored and fragrant, about 2 minutes. Stir in flour and cook for 1 minute. Whisk in broth, ¾ cup Guinness, sugar, and thyme, scraping up any browned bits. Bring to simmer and cook until slightly thickened, about 3 minutes. Stir in beef and return to simmer. Transfer to oven and cook, uncovered, for 90 minutes, stirring halfway through cooking.

3. Stir in potatoes and carrots and continue cooking until beef and vegetables are tender, about 1 hour, stirring halfway through cooking. Stir in remaining ½ cup Guinness and parsley. Season with salt and pepper to taste, and serve.

Most stew recipes start by searing meat in batches on the stovetop. We avoid that messy task by cooking the stew uncovered in the oven; the open pot allows the meat on top to take on flavorful browning. In addition, the liquid reduces, concentrating in flavor and texture, while the meat cooks.

Oh and we used to make "bar-bq" in the crock pot....  A chuck roast, a bottle of beer and a bottle (or to taste, normal size bottle) of catsup...   Cook until really tender.

  We do the same thing at one stop, usually full of laughs and some pretty good gifts, although this year I got stuck with 25 bucks worth of some sorta candles... :bs:

We have done the white elephant exchange a few times.  Most memorable was when Cathy's 85 year old grampa got a book on Fantastic Sex.  We still laugh about that.   There was a beer making kit that made the rounds one time.  I had my hands on it three different times, but I finally ended up with a toilet brush!

I have my version of "get something nice for yourself Clark". (Christmas Vacation).  I give my sons something we need or can use at our hunting camp.  This year one got a deer stand swivel chair and a trail camera. I paid for (and went with) a two day fishing trip on Red Lake for my other son.  So basically I ended up with all the gifts.  I wonder if they have figured it out yet.   :rotflmao:

We play the dice game every year.  We cleaned up this year.  7 or 8 differnt pots and pans, and more stuff.  Had my two girls complain about a couple of things we won and I told them that it's a brutal game.  We give the second round 15 minutes.  good luck.
