Maybe I missed it Glenn but on the first step  do you  fill the jar half full of fish then add the salt and vinegar? Kinda like the last step?  :confused:

yea that what i do. fill jar 1/2 full with fish, and some vinegar, that settles the salt down some. finish filling the jar with fish, BUT dont pack it tight.

then fill the jar up the rest of the way with vinegar. make sure the salt is dissolved......i always check to make sure there is enough vinegar after shaking and dissolving the salt!!!!!

One thing I didn't see here is a step my buddy said you should do to make the pieces firm, is to freeze the filet prior to pickling.  I used to give him nords all the time and pickled them.  Sorry to say he passed away last fall and now I have no one to make pickled fish.  :pouty:

So sorry about your friend DE.  We talked about this last year.  I think Delman brought up that you should freeze them for a couple of weeks first.

no I don't mix the 2 first. its hard to decipher exactly how much vinegar you need that way.

now remember to  mix those jars up good each day. I do it twice a day!!!!!

most if not all my fish I use for pickling is froze. usually to accumulate enough pickling fish material to make a worth while batch.

I don't buy what Del sells about having to freeze pike prior to eating however, but to each is own. I've had a whole hell of a lot of pike straight from the lake to the deep fryer in my life.

I wont disagree deadeye with that step but I firmly believe a key step to firm fish is between the salt and vinegar brine and the brine with the spices is thouroghly rinsing  the fish, letting the fish in ice cold water for an hour and squeezing as much water out of the fish before putting it back in the spice brine. it works for me!!!!!!!

I believe its in the spices. I just buy the pickling spice at fleet farm. my dad used to buy each spice his reciepe called for individually. his reciepe had lemon in it to. I've been tempted to do this but haven't yet.

Those who wish to prepare raw pickled fish should first freeze the fish at 0° F for 48 hours.
The larvae of the broad fish tapeworm pass through smaller fish until they lodge as hatched small worms in the flesh of large carnivorous species of fish, like northern pike, walleye pike, sand pike, burbot, and yellow perch. This worm, if eaten by humans in its infective stage, can attach to the small intestine and grow to lengths of 10 to 30 feet.
The infective worms are destroyed readily either by cooking or freezing. Two recent outbreaks of this tapeworm in Minnesota were related to eating uncooked pickled pike.

Cooperman that is probably the most important part of pickling fish.  The freezing part for sure.  I also have a pickled pike recipe in the Recipe page of my site below.  My mom gave it to me years ago and I still go by that now.  Glenn's sounds good too.  good luck.

The best recipe I’ve found for pickling northern is the one from Shotgun Red, great tasting, and very firm.

Reb, Morey’s (you know, where Glenn gets all his fish)has herring in dill sauce which is pretty good. It’s my mothers favorite. I stop and get her some when I come down to visit.

That dill cream sauce herring at Morey's is great!  I get it every time I am there.

I haveta try to find some.....never seen it down here.
I just added a 1/4 tsp of dill weed to my jar of herring...I'll try it out tonite.  :tongue:
