it will be fine..  I know folks that hunt them all the time and enjoy the meat  they harvest..

Like any wild game as long as you take proper care of the meat after you shoot it, it will be great.  If you throw it on a bumper hitch rack and let the exhaust flavor it all the way back to MN, probably not so much.  Good luck!

Mule deer are a fine tasty animal...
Speed goats (antelope, pronghorn) are the ones that taste like sagebrush. But make really good sausage

Mulie bucks in the rut are tough eating, do yourself a favor and cut off the rear glands off. I live a cpl hours west of Williston, I think you will find it pretty tough hunting for mulies. The encroachment of the oil field has not did them any favors. Unless you can find a really nice 25+ inch heavy four point, I would shoot  a doe, and then a whitetail.

Ours are strongly flavored, different not bad (Colo Springs).  Marinade in buttermilk if you don't enjoy the flavor.
