I AM SMOKING  3  TWELVE POUND BRISKETS  AS I TYPE .  ON SAT .  I WILL DO 3 MORE  FOR THE PART ON SAT. THE THREE FOR TONIGHT  COME OF THE SMOKER  AT TEN THIRTY  AND GO RIGHT INTO THE CROCK POTS AND IN THE AM I WILL PULL THE BEEF APART AND MAKE BBQ !!    THE THREE FOR SATURDAY   I WILL BE SMOKING  AND MAKING A FINISHING SAUCE  FOR DIPPING THE  BEEF IN .  SHOULD BE GOOD.

  Well the boys like it ..  SPINACH , RCHAZE, AND GRUTEMAN !!  I thought they turned out real good myself. We had em both ways , i pulled the beef into bbq beef sandwiches ,  and sliced the other ones . I also made an awsome dipping  sauce for the sliced  brisket.  ALL and all  they were good.  thank you for asking .....

Tonite is pizza with smoked homemade pepperjack sausage, pepperoni, onions, mushrooms and green peppers, with a homemade crust that's been proofing in the fridge for 2 days and Sunday is spareribs with taco pasta salad and coleslaw.
Hope eveyone has a great weekend...in the smoke....

Here's the pizza crust recipe, it's ratio'd down from 'Tom Lehmann's New York Style Pizza Crust Recipe.

1 lb (5-6 cups) of High glutin flour from your local bakery, 12% protien or more, usually called fancy clear hard or something like that

1Tb of active dry yeast, proofed in 110 degree water till bloomed 

18 oz of water 110 degrees

1 1/2 tsp salt

2 Tb olive oil

I added 1 Tb of gran Garlic

Mix half the flour and all the other ingredients til you get a real sticky, gluey, stringy mess with the Kitchen Aide mixer using the paddle and add the rest of the flour and use the dough hook til you get a nice springy ball of dough. Total time 15-20 minutes or so. Now the key is to let the dough rest in the fridge for 12 to 48 hours and you get a nice thin, chewy, hard crust that really stands up to some heavy toppings of your choice. It's a little work but well worth the trouble.

Well, i am at the shack and I usually glob peanut butter right out of the jar with wheat thins and cold coffee.  :-)  That said, I did make something great last night.  I chopped up an onion and fried it with venison hamberger and a little olive oil, seasoned with garlic seasonall, salt and pepper, and then added some BBQ Sauce called Sweet Baby Rays and I ate so much of it I nearly blew up.  REALLY good.  Tonight, it's back to peanut butter.  ha ha.  Shack life is simple.

Well, if you consider working around my property, riding?  I harrowed my food plots yesterday after disking them last weekend, planted them, then ran over them a bunch of times with the quad to tamp the seed down... rain last night was a Godsend !  I've never taken my ATV on a riding trail... I've only used it for utility here, with cutting wood, farming, running hunters around to stands when I have the family here for deer season, etc.  I really like venison... the only beef I buy anymore is a nice filet when I can afford it which isn't often.

i use my atv for mostly riding and plowing snow,
the price of beef is way out of line. and i like my
steak and prime rib! if you are close to the soo
line maybe we can get some people together for
a ride sometime.

I used to plow snow with my Kodiak when I had my business at home.  Once I got an office, I just kept the quad up here at the cabin after that.  However, plowing my road into here is a huge job that I hire out so I don't plow too much here unless it's just a little snow.  Ya the Soo line is close by.. Pats Restaurant, Bait and Bar on 47 is 5 mintues from my cabin. There are always lots of ATV's parked there, and trails thru Isle for that matter too.  I will have a lot more time for fun starting in August when my business is sold and done.  Not sure how I will pay bills then.. maybe wash dishes somewhere..  ha ha.  Writing doesn't pay bills.... as you probably know.
It's pouring rain here right now... but a rainy day at da shack is better than any day in the Metro.  Do I hear an Amen !  I actually found myself drawing out house plans for a year round home here.  Scary.

members and mno members and ride.
the wife is still looking for work after state farm closed in woodbury

Ya, X was at my place.. um, 6 or so years ago? To do a spread in the mag he writes for, about new ATV owners... the snow was two feet deep.. the quad got boogered down and we had to carry it out.  ha. 

Ah so, yer missus was one of the casualties when State Farm closed?  I still can't figure that one.. here SF gets their VP in the pecking order for Chamber of Commerce president, they come out real big.... they host all kind of events there, and next thing you know, it's a masoleum with no buyers.  Go figure.  I wonder which management genius lost his head over that one.

So what does a "ride" on the Soo line consist of, besides racing about and getting muddy?  I spose I'd have to go get my helmut out of mothballs.  :-)

the wife had 28 years there, either we moved to lincoln
nebraska or she lost her job...  well i wasnt going there!
the soo line is like a gravel road  no mud.
but can find mud if you want it. i go slow, no racing for
me!

Well, I have been thawing the walleyes my boyfriend gave me last week and boy do I deserve them.  I emptied my storage locker up by Forest Lake yesterday and today... brought it down here to Oakdale, two big trailer loads, about 3000 pounds of records and raw materials and "junk", organized it all in my garage.  I ache in places I didn't even know I had.  A walleye pig-out sounds sooooo good.  My son and I hammered the walleyes yesterday on the high seas of Lake MilleLacs (got 4 keepers, three monsters and 2 little ones) , but he took them to clean and filet them and I'm too tired to go get em.

lessee... fried, sauteed, broiled.  hmmm.  so many choices.  :-)
