I would like to try some new recipies for deer jerky.
My recipe is as follows.
1/4 cup brown sugar
1/4 cup soy sauce
1/4 cup teriaky sauce
1/2 cup worchester sauce
1 teaspoon liquid smoke
5 teaspoons salt
4 teaspoons peper
2-3 pounds venison strips or slices
let marinade overnight and then dehydrate to desired dryness

For extra heat I will use a little hot sauce
Anything that is free is worth saving up for.

What cuts of meat are best for jerky?

the easiest are the roasts, but any scrap big enough
will work. you just want to get the fat and silver skin
off. i have always used hi mountain jerky cure, gander
mtn carrys it.

I used HI mtn too. Turned out very good.

i like the hickory or the pepper blend, with hi mtn it also
cures the meat.

How do you dehydrate it?  Stackable food dehydrator or crack the oven door open?
Take a kid hunting and fishing... It'll be the best thing for generations to come.

i have used both methods and both work fine. you just want to keep
a eye on it so it doesnt get to dry. i have been doing mine in a smoker
at around 150 degrees and light smoke.

I've never done this myself before. I'd really like to try it this year. I don't have a stack dehydrator, so I'll use my stove. Can anyone give me a general step by step process on how to do this? Appreciated, thanks.

after cure and seasoning, you want to put the meat on some racks
of some kind. i got some rabbit fence material, it is galvanized which
isnt good at high temps but you will run about 150 degrees.
i cut the screen to size, then arrange your meat on the rack so
it isnt touching the next piece.you might want to put aluminum
foil below to catch any drippings. run your oven at around 150
with the oven door cracked open, depending on the thickness
of the meat it should take around 2-3 hours.

Another trick when making jerky is to slice your meat with a meat slicer if you have one or know someone who does. We happen to have one and we partially thaw out the meat and then thin slice it before putting in the marinade over night. The thin slices cuts down on time in the dehydrator and makes it easy to handle.

you can also dangle the meat from the rack in the oven using a toothpick, just make sure to spread out the big pieces so they cook up evenly.
 like mr bass said a meat slicer is really nice to use when doing this.

My bro and I grind our deer meat up and stick it in a jerky gun and then put dehdrate it. works awesome.
If I can Grill it, I'll Kill It!!!!

The wife got some of them cookie racks from the store, and they got a screen that lays in a tray.
We just use the Shore Lunch brand jerky seasoning....
Cut um thin and put um in the oven.
Good stuff Maynerd !!!!

  Gee, he called me MR bass and SIR, must want me to take him fishing again... Thanks for the new wheels there Hunter, I was wondering who did the work on the scooter. Wish you would have greased the winch. Kind of dry after having to catch your fish for ya... As for the nap time, I thought daylight savings time was really making the day short!
