I remember hearing about that Alpine seasoning.  Which one do you use on fish Glenn?  Maybe I should just get them all.  I just talked myself into that one.
pretty sure its the natural blend.....but not the sea salt variety. i'd have to look when i get home.

no worries, ive got the best nurse in the buiz. xkinda scary tho.  have a great weekend!!6

Boar I posted this earlier but got cut from the someone else posted thing.  174/114!!!  HOLY BALLS, you better get on blood pressure meds today!   I take a mild dose every morning and I am at 120/80 or even a little less.  A friend of mine used to feel the pressure in his eyeballs when it got too high.  He didn't want to renew his prescription cuz he was saving money for a new rifle.  I asked if I could have the rifle after he kicked the bucket from the high blood pressure?  He decided to go get the meds and is still with us.

Miine was that high before Dr. Fondler took my boys, but came down afterwards.. :surrender: Evening all, been watching the boys pooch today, man what a handful.  10 weeks old and I gotta put a laundry basket to keep him upstairs,  the two dogs have been getting along great, the little guy is just not sure of the whipper snappers rabbit. So much for a relaxing night on the couch!!

Morning boys. I like the pooches. They tucker out eventually. Had -2 did morning, looks like it is going to warm up a little before the big  cold snap hits. Going to be making some ice in the next week. We only got a dusting of snow overnight, so that is good. Not much else happening. Have a good one!

Yup just a dusting here too and -4.  Bought two lobsters yesterday.  On sale for $21.99 per lb.  Cost me $48 since I picked out two big ones.   :sleazy:  The wife won't be able to eat all of hers so that will be leftovers for me.  Maybe I will cook a ribeye too.  Have to come up with something to eat with the crustaceans.  Maybe some asparagus.

In need of some help and I know this is the place to get it. Got to get a 16 pound prime rib out of the freezer this afternoon after work. My Christmas treat for my wife and our kids and their spouses on Monday. Haven't done one for quite awhile and kinda forgot what exactly I did last time. Been told a couple different receipes, one was 525 degrees for an hour and let sit until internal temp is 140 which should be med. rare. any good suggestions as far as oven time and temp and what is a good rub for the outside?????? Couldn't pass it up at the price I paid. Have a great day.

Thanks.

you might want to go to the "what's on the stove, oven or crock pot"  forum....  but I'm sure you will get help here too...

make your self a good dry rub and rub it down good...  what ever temp you decide to cook it at pull the roast at 135, for rare.  a little higher, 140 med. rare.   let it rest before slicing!!!   and it will cook while it rests....

In need of some help ... 16 pound prime rib ... any good suggestions as far as oven time and temp and what is a good rub for the outside?

I'd go with the reverse sear method.  You can google several variations, but here is the gist.

I apply my rib rub the night before I cook so that the salt can penetrate the meat.

Take the meat out of the fridge and let it come to room temperature:  30 minutes?

Preheat oven to 200 degrees.

Roast uncovered until it reaches 128-130 degrees for medium rare.

Cooking time is approximately 30 minutes per pound according to what I read.  I don't recall how a really big roast goes, so your mileage may vary.

(It is OK to open the oven to peak at the thermometer with this method.)

Remove and let rest 20 to 30 minutes on cutting board covered in foil.

While roast is resting, raise oven temp to between 500 and 550 degrees.

After roast has rested, put in 500-550 degree oven uncovered for 8 minutes to form crust.

Remove, carve, and serve.

The benefit of this method is that you can finish the meat sear right before you are ready to serve without over-cooking the roast.

Also, you don't have to wait because the roast has pre-rested.

Finally, if the roast gets done earlier, you can let it rest up to 1 hour before you pop it back in the oven and you'll still have the results you are looking for.  So this method gives you some wiggle room for getting the rest of the meal done without letting the meat over-cook.

There are also lots of good prime rib rub recipes to google.

I usually just make one up depending on what I have in the cupboard:  salt (or celery salt), pepper, onion powder, garlic power, oregano, thyme, coriander, celery seeds, dry mustard.

Good luck.

Boy, that sounds just right to me!!!  :happy1:  I'd just use cracked black pepper and some coarse salt for a rub on it. Less is more with prime rib, IMO.
