Looks good. We're working on mulberry preserves, mulberry syrup (delicious on ice cream), and dehydrated onions.
It has begun.
I used to be cute and adorable. Then, I had my first birthday. Been downhill ever since.

not sure what its like up your way but Becks told me i should get them when i can. there reduced there patch and it sounds like it is a short time frame to get them!!!!

i'm giving my stepdad half of them.

We have an occasional jar of kind of soft pickles.  Maybe 4 jars out of 40 this year.  I have been boiling for 20 minutes.  Didn't you say you only boil for 10 minutes?  I think I may be boiling them too long.

Googled alum.  You have to put all of your cukes or whatever veggie or fruit you are canning in a vessel of water.  Then add the alum and stir.  Leave in overnight.  OR they have Ball brand Pickle Crisp granules.  Add an 1/8 tsp in a jar.  Adds no flavor just keeps things crisp. 

I do think we are boiling them longer than needed.

I don't use this Alum, ever. I boil them 10 maybe 15 minutes at the most. Longer there soft.

I've also noticed a lot of you open a jar the pickles are a bit soft but after there cold seem more firm.

I have noticed that too that they seem harder when cold.   :happy1:

Wife and daughter are canning today. I stay out of their way but I am on charge of the compost.
After today, they will have canned 65 jars of various pickles, relish, green beans and mulberry. Once the tomatoes are on, they'll do about 40 jars of salsa and sauces.
I do help cut up habaneros and jalapenos and onions for my salsa.
Last year they canned a total of 162 jars.

She is done with dills and the dolls with a jalepeno in the jar. She did the beet pickles yesterday. She also has a boatload of refrigerator pickles
 She will make more of them as space permits.

Man those beet pickles are unreal.  Loved my Grandmas.  Could eat a whole quart in a short time.  I need to make some refrigerator pickles so we don't waste any cukes.

Our lettuce was kind of bitter this year.  Maybe we will plant the 4X7 raised bed spot with beets next year.  I was at the local farmers market a few years ago and the ladies were almost getting snippy with each other as to how many beets they each could get.  They cleaned the guy out.

Speaking of pickles—does anyone make watermelon pickles?

Years ago I had a huge garden with a lot of every in it. We pickled and canned and froze a lot of different things.
That was at a house with 14” of black dirt on top of blue clay as far as you could go down. The soil was great for lots of stuff, but not so much carrots, rutabagas, and other root crops. It was really good for corn.
Now I’m in sand country and can’t have the variety plus my closest neighbor feeds deer which means deer, raccoons, squirrels, and every other critter known to man in these parts makes my gardening a fond memory.

I did up 2 dozen ears of sweet corn Sunday. Got 12 pint bags from it

Decided to do up another dozen to make sure I have enough. Really tasty corn too!!
