I cooked it at 250 and took it out at 128 internal.   Perfect.   

For me, 140 plus the carry over is way too done.   I try to end up after resting me and the roast at 130.   But people's preferences vary.

Looks great markn. We've been doing the oven method with them. Anyone smoke em or do theirs on the grill? Gonna try it outside next time.

  At 250 degrees how long does it take to do a six pounder? Just curious. I may try one in the smoker, but that has to be during a warmer month than this. Thanks for the comments everyone. :happy1:

Mine was bigger than a six pounder, and I would say maybe 4 hours of cooking.  I had to take it out for a while in the middle of the morning for my daughter to bake some caramel rolls she made.    Actually time should be sort of the same since a 6 pound and a 9 pound are same thickness, except one is longer.    I was using convection on the oven, but I don't know that it made much difference. 

I was surprised it didn't take as long as I thought it might.   I salted it the day before so it had all day for the salt to penetrate.   

We were sort of flexible on the schedule, but the roast would hold, tented in foil, for an hour or so.  Then crank up the oven to 450 or 500 and give it 10 or 15 more minutes to brown and crisp it up good.   

I've never done beef in my smoky mountain.  That's an interesting thought.

I won't tell ya Fareway has T-bones today at $5.99, cuz ya wouldn't have me over anyway, and ya'd probably just throw them in a bag with yer Soused-up thingie.  ;)  :rotflmao:

Besides I am not cooking what you suggested.  Might make cookies though.   Oatmeal with apricots and cherries...  Undecided...

went Aldi's this morning and got one of their  pizza's to try.. 16 inch all meat for $7.00  I guess it's worth a try!!  I'll let ya know after lunch...

We do Aldi's meat pizza's quite often. We'll just doctor them up with whatever we have in the fridge, usually some salami, and/ or some green olives along with some more cheese. they always turn out pretty good & at that price, kinda hard to beat. If we don't have a Aldi's we'll take 1 of glenn's favorites & doctor that up some too. Not bad either.

Now yer talkin'! Always got a purple onyum in the onyum drawer...like thin strips in my salad with the cherry 'maters and green peppers, radishes, croutons.... :kiss:

OK the more I shop at Aldi's the more impressed I get with their products....    I made the pizza I got yesterday, a 5 meat one..   I added onion, white did not have a purple, mushrooms, black olives and more cheese...   it turned out great!!!!  they have a good flavored sauce on it and that helps too..  I'll buy another someday!!

it's the Mama Cozzis brand take and bake!!
