We've got -14 to start. The snow let up just after lunch yesterday so we went out & moved it before it got too cold. About 3" for is. I see they've backed off on Fridays temps a bit for us but still calling for 30+ thru at least Monday. Nothin else to report. Stay warm & have a good day everybody

Dotch,  last year I believe the rambalambas were up 8-10 at one point but the gals staged a comeback only to lose anyway at the end.  Maybe besides the early birthing this year you also have had a ram edge due to to some other phenomenon?

Now that I'm a single dad of two I got the 16 (ewe lamb) and 18 (buck lamb) year old toddlers off to school with an epic Leech Lake style breakfast with bacon as the staple item.  It's nice being a solo parent especially when the kids are driving and pretty self sufficient.  Implemented a few tasks around the house for them and I nearly had a stroke when they didn't complain and actually do them.  Parenting success!

Matt is on the precipice of making his college decision.  St Thomas vs U of M.  Financially the U is appealing but I really think St Thomas would benefit him more.  Mom wants him to go to ASU so she can visit (another reason divorce was a good plan) him in a warm climate.

Things are great with the Lisa.  I still haven't discovered her flaw that makes her think I'm attractive but will roll with it as long as possible.  I'm completely in love...I said it.  :azn:

It is called "tzatziki" sauce.   It is good, and I dislike cucumbers normally.   

Here is one from cooks illustrated. 

Greek-Style Lamb Pita Sandwiches with Tzatziki Sauce—Gyros

For a home-style lamb sandwich recipe that would give us the same flavors and textures as restaurant gyros, even if they didn't have the traditional appearance, we pan-fried ground lamb patties flavored with oregano, onion, and minced garlic. To make the patties juicier, we added a panade (a paste of fresh bread crumbs and milk), substituting pita crumbs for the traditional bread crumbs. For readers who can’t easily find ground lamb, we developed a ground beef version of our lamb sandwich recipe.

ingredients

For Tzatziki Sauce
1cup plain whole-milk yogurt
½ medium cucumber, peeled, seeded, and diced fine (about ½ cup)
⅜teaspoon table salt
1tablespoon juice from 1 lemon
1 small garlic clove, minced or pressed through a garlic press (about ½ teaspoon)
1tablespoon finely chopped fresh mint leaves or dill

For Lamb Patties
4 (8-inch) pita breads (see note above)
½ medium onion, chopped coarse (about ¾ cup)
4teaspoons fresh lemon juice
½teaspoon table salt
¼teaspoon ground black pepper
1tablespoon minced fresh oregano leaves
2 medium garlic cloves, minced or pressed through a garlic press (about 2 teaspoons)
1pound ground lamb
2teaspoons vegetable oil

Accompaniments
1 large tomato, sliced thin
2cups shredded iceberg lettuce
2ounces crumbled feta cheese (about ½ cup)

Instructions     Serves 4

Since the yogurt and cucumbers in the Tzatziki Sauce need to drain for 30 minutes, start making the sauce before the patties. Although we prefer the richness of plain whole-milk yogurt, low-fat yogurt can be substituted. Greek yogurt can also be substituted, but use 1/2 cup and skip the step of draining.

While we didn’t like the flavor of dried mint, dried dill may be used in place of fresh, but reduce the amount to 1/2 teaspoon. For the patties, the test kitchen prefers the flavor of fresh oregano, but 1 teaspoon of dried can be substituted. The skillet may appear crowded when you begin cooking the patties, but they will shrink slightly as they cook.

If using pocketless pitas (see illustrations below for folding instructions), heat them in a single layer on a baking sheet in a 350-degree oven for 5 minutes.

Do not cut top quarters off pocketless pitas; instead, use a portion of a fifth pita to create crumbs in step 1.

When cooking the patties, use a splatter screen to keep the mess to a minimum. The patties can be prepared through step 1 and refrigerated for up to a day or frozen before cooking as directed in step 2 (frozen patties should be thawed in refrigerator prior to cooking). This recipe can be doubled.

1. For the Tzatziki Sauce: Line fine-mesh strainer set over deep container or bowl with 3 paper coffee filters or triple layer of paper towels. Spoon yogurt into lined strainer, cover, and refrigerate for 30 minutes.

2. Meanwhile, combine cucumber, 1/8 teaspoon salt, and lemon juice in colander set over bowl and let stand 30 minutes.

3. Discard drained liquid from yogurt. Combine thickened yogurt, drained cucumber, remaining 1/4 teaspoon salt, garlic, and mint in clean bowl.

4. For the Patties: Adjust oven rack to middle position and heat oven to 350 degrees. Cut top quarter off each pita bread. Tear quarters into 1-inch pieces. (You should have 3/4 cup pita pieces.) Stack pitas and tightly wrap with aluminum foil. Process onion, lemon juice, salt, pepper, oregano, garlic, and pita bread pieces in food processor until smooth paste forms, about 30 seconds. Transfer onion mixture to large bowl; add lamb and gently mix with hands until thoroughly combined. Divide mixture into 12 equal pieces and roll into balls. Gently flatten balls into round disks, about 1/2 inch thick and 2 1/2 inches in diameter.

5. Place foil-wrapped pitas directly on oven rack and heat for 10 minutes. Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add patties and cook until well browned and crust forms, 3 to 4 minutes. Flip patties, reduce heat to medium, and cook until well browned and crust forms on second side, about 5 minutes longer. (See below for tips on flipping patties.) Transfer patties to paper towel-lined plate.

6. Using soup spoon, spread 1/4 cup Tzatziki Sauce inside each pita. Divide patties evenly among pitas; top each sandwich with tomato slices, 1/2 cup shredded lettuce, and 2 tablespoons feta. Serve immediately.

(they have a variation with beef instead of lamb also, a little less lemon juice, double oregano, and an extra clove of garlic)     Can also grill them.

Nice recipe del. The Mediterranean's know a thing of two about cooking lamb as they've been at it a while. Finding time to get all the stuff and putting it together this time of year is another matter. I could see trying something like that with our own fresh veggies out of the garden this summer though.

Mornin'! Was 4 above on the truck thermometer and 5 on the house model. No newbies overnight and everyone seems to be surviving the cold snap including us. A little Crown & Coke before supper last night for a change of pace. The caffeine kept me from falling asleep before 10 p.m. so I could do lamb check and feed some bottle lambs. Surprisingly, some of the lambs are refusing their bottle. They look fine so apparently their mothers are picking up the slack a little better. About time. I have enough welfare recipients to pay for.  :laugh:

Dotch, if you go to costco, they sell Tzatzki and it is quite good.   It works on a  lot of stuff, not just gyros.

1* here in CAWville and all is still. Big yellow moon setting at 5:15 this am, quite a sight. Might have to go for pics tomorrow. No plans for today. Put up some new shelving in garage yday for all the nostrums and goodies I use to keep Mr. Sparkles shiny. That old metal shelving unit had rusted to heck. Got the new modular plastic ones. Everythings plastic now. Isn't cheap, either. Gettin' awful antsy for Spring to get here. Wanna plant some of those veggies. See in the paper that the last one and only bait shop in CAWchester closed up and the guy moved it to Lake City. Said it was too expensive here. This F*** town is going down the crapper with this Mayo Clinic DMC bullshirt. There's been so many businesses and restaurants that have closed up and pulled out it isn't funny. All say the taxes have skyrocketed because of Mayo and forced them out. Then Mayo steps in and buys their buildings. Ruthless b*****ds. Makes me sick. I have no idea what to do for bait now, if ya wanna head up and hit the Zumbro river or anywhere...yer screwed. Dig yer own worms, I guess. Selling my boat was the right thing, I'm thinking more and more. Maybe I should open a bait shop.... :scratch:  Have a good one and keep warm, guys.

We had -12 when I looked a few minutes ago. -30 + WC's overnight is what the Bemidji station was sayin. A little better temps today as the weather advisory only lasts until mid morning. Watched a good BB game last night, thought the Hawkeyes were going to pull it out at the end of regulation & the 1st OT. Not so, Mason & the 2 guys on the boards made sure of that.It was a good win for the Gophers. I'm not sure if they play again in IC yet this season, if not maybe in the tourney. Nothing else going on here, have a good 1

I'm interested in crappies and fatheads. Not half dead store minnows.  Sure, drive 8 miles south, then 8 miles back north where I started from, then out to the lake. Not. How about you deliver when I call ya?

Warming up already in Andover, 2 above.  Grinding the pork and beef for ring bologna today.  Get it all mixed up and seasoned and cure for smoking tomorrow.  Went fishing on Monday to Grindstone Lake.  Fished in 6 feet of water.  Seen a number of brown trout but they were not hungry.  Going to Duluth on Sunday to fish up there with my brother.  See if I can get some walleye's before the season closes.  He's been getting some nice 10 inch perch and crappies there also.  Pike for pickled pike would be nice as well.  good luck.

That ballgame was a heavyweight fight Gunner. Jok was back to his old self although the shot blocking and play of the Gophers front line was impressive. Was amazed to see the Rodents prevail after 2 OT's. They don't play in IA City this year. Gophers remaining games are at Rutgers, IN & MI at home, at MD, Penn State & NE at home, then at WI. Strength of schedule & RPI are a plus. Record stands at 17 - 7. If they stay healthy, their key players remain eligible, and they get to 20 wins, they should have chance to go dancin'. :happy1:
