Yup!  But then you may lose some trust in your butcher.  I did.

I lost mine at Fareway totally!!! He hated CAWchester and moved back home!!     :angry:

I just ordered the instant pot sous vide, $70.00 on Amazon. I love the instant pot, I use it a couple time a week. I’ll let you know how it works.

They look like pork CSR's except beef.  Actually have nothing to do with ribs but they call them that.  Interesting about the SV method Del.

So, where on the cow do they come from?   If you would like to try sous vide, I have a spare you could borrow.   Then send it back when you are convinced.   Or watch for a sale...   Mine are Anova.   They sell one from "instapot" at target.   Wand looking thing that clamps on the side of a container and heats/circulates the water.

Use the sous vide and you still get to play with fire since the outside of the beef needs to be seared.    Some people use a torch or a very hot cast iron pan.

I'd recommend nothing less than this for a good sear after ya souse it up.  ;)
