Can't believe this wind.  Seen some pics from Lake Superior with the waves.  They had the spray from the big waves go over lighthouse structures that are 48 feet high.  It was howling all night long here also, still is.  Yesterday when I went shopping it was blowing so hard it nearly stopped me in my tracks pushing my grocery cart to my truck.  I actually had to pull the cart from the front to my truck.  Had my pike chunks soaking in salt water for 3 days so I drained and rinsed them.  Put them back in the container and covered the chunks in plain vinegar for another 3 days.  Then I will drain that and rinse.  Make my pickling brine and simmer it and let it cool off.  Next day the chunks will go in mason jars along with onion slices and covered with the brine.  7 days after that I start eating.  good luck.
i tried many reciepes and my fish always turned out soft and kinda mushy. then i found a reciepe on another site that works awesome.

basiclly you take the fish, loosely pack the fish in qt jars, add 5/8 cup picklin salt and fill with vinegar. shake till salt is disolves. then continue to shake, roll jars a few times a day for 5 days. dump out rinse well then let set in ice water for an hour. repack jars with fish, onions 1 bay leaf and 1 cup sugar. as before keep mixing shaking till sugar is dissolved and continue for 5 more days. no brine to boil!!!!!!!

I think that second phase with just vinegar makes the chunks firm.  I make the brine because the simmering brings out all the flavor of the brine.  Wine is included in this as well.  Used to use Silver Satin but they don't make that anymore so I use another cheap wine Thunderbird.  good luck.

with the process i explained above i dont either anymore. quit using the wine because this reciepe doesnt call for it. actually other then the rinse no water involved either. and dont heat the brine. it works for me so...... my om makes her pickled fish very similar to reiny's so not sure what my deal was.

'bout 30 for a low so the ground was froze at choretime this a.m. No mud. Yayyyyy! Wind not much of a factor either so it was downright pleasant. Cold snap on the way though. After a 67 degree high Monday, tonight we get a forecast low of 5 with a 20 degrees for a high tomorrow. Cold all weekend then snow Sunday into Monday. That oughta make those last 2 ewes lamb!  :tongue:

Almost mid March already.  Time sure is flying just like the last two days of wind.  Taking care of two of our grandaughters for a week and a half.  My daughter and her husband are going to Germany.  Taking my grandson with them.  Let the cold come.  Won't be long and it will be gone.  Already looking forward to steelhead and Looper fishing on the north shore.  Think this will be a early run with a lot of the streams on the north shore partially open already if not more than half open.  Many of the lakes in the metro are all open or half open which hasn't happened in awhile.  Going to make another batch of beef jerky in a couple of day's.  Been buying some bottom round and tip roasts at 2.99 this past week.  then I will make 25 pounds of apple brats for grilling this summer.  Ya, Glenn, whatever works for you works best.  Stick to what works for you.  So many ways to make pickled fish.  Many ways are nearly the same but have some tweeks here and there.  good luck.

YGIF...  I am so looking forward to the weekend.  I have worked the last 2 Saturdays and need some goof off time.  A trip to Bemidji tomorrow for that Culvers experience and maybe one of Glenns favorite pizzas (Papa Murphys) to bring home...  I usually get the family size with everything on it but that Chicken Tuscan looks good on the commercials.  The wife wants to hit some women stores so maybe I will browse L & M or sit and watch people at the Mall whilst she is there....   That is a funny deal.  Other guys sit there too doing the same thing.  They usually try to not make eye contact with each other.  It is a hoot watching it.  Of course I am waiting to say hi to someone who looks at me.   :rotflmao: :rotflmao: :rotflmao:  And as a good looking woman walks by most are trying to watch her without anyone knowing it.   :rotflmao: :rotflmao: :rotflmao:  Man I entertain easily....  Have a good one.

7 degrees for a low at choretime. Monday's 67 degree high was still on the thermometer this a.m. so that was a reminder of how quickly things change here in MN.

Ha! That makes sense, Dotch!! Don can out eat me....and that's something. The steak was was down in Stewartville at Tarsilla's....been there? We used to hit it on Friday nites then migrate over to the the down-under... :evil:  They still have the Friday nite fish fry, was actually going to go there tonite, but Charlies pub and eatery is only six blocks away. More time at the trough. 
Those Chinee probably sounded like a gaggle of geese honking last nite after you left.... :rotflmao:

That sounds awesome Reb. Did lunch at the Tarsilla a couple years ago when I was over that direction on "official business". Had a Rueben there that was purty darn awesome! About 30-some years and 40-some lbs. ago, my mother in law marveled at my capacity during Christmas and Thanksgiving. She made all kinds of Norwegian stuff that I'd never seen before. I was like a kid in a candy store. Even liked the way she made lutefisk. The wife's family was notorious for being picky eaters. Not me. She always said "Boy, for a little bugger he sure can pack it away!"

With all this food talk, now I'm hungry again. Not sure what kind of table fare is on tap for the weekend. Thought perhaps Auntie Mar Mar would show up so I'd have an excuse to toss something special on the grill now the snow's gone. Could go to the meat market to drool on the display case for a while. Or, there's still some lamb left I've been hoarding so that could be sacrificed.  :cool:
