Still eating up the maters. The warm weather is causing them to deteriorate more quickly than anticipated. BLT's, maters, cottage cheese, Mrs. Gerry's slaw, Bongaard's crushed red pepper cheese curds  & watermelon winter radishes. Be wise to stay upwind of me tomorrow. Helps keep the wife from pawing me constantly too... :sleazy:

Had to share this.  Beef chuck roast with Yukon potatoes and carrots.  Some little red onions from the garden.  Added some Better than Boullian to some water to just cover it at first.

One of my all time favorites.  I like using my new porcelain cast iron kettle for it.  When it is full of food it weighs about 38 lbs.  SO I did it before my hernia repair limit of 15 lbs.  I also like this cool time of year so I can let it sit on the deck overnight instead of trying to get it in the frig. I worry about it breaking a shelf.

You can find lots of "copycat" recipes for this dish on the interconnected web.  They all seem to be websites hosted by cougarish Martha Stewart wannabees, but I mostly think all these sites copy from each other and internet "bots" create these personalities out of thin air to get clicks.  The sites and recipes are all pretty much the same.  They show them served as appetizers in dainty little leafs of bib or butter lettuce.  I end up using romain lettuce, because it is bigger, but you could use iceberg too.  It don't matter.  I also use flour tortilla and spread just a little extra hoisin sauce on the tortilla before I add the filling and roll it up.

I have always thought those lettuce wraps sounded good.  How about using ground pork and romaine lettuce?  Ground bird doesn't excite me very much.  BUT the wife may want ground turkey.

Pork and turkey should work - as will romaine lettuce.  I don't know why PFChang went with chicken.  Prolly to seem healthier with their clientele. 

Actually, when it comes to chicken, I don't use pre-ground tubes from the grocery store.  I use breasts and/or thighs, I freeze them partially, the dice them in small pieces, and then chop the pieces some more with a chef's knife - so its more like minced than it is ground.

Hoisin sauce is pretty strong, but it is the ingredient that gives the dish the Asian flair.
